Umami BBQ Wings

 

Ingredients:

Wings

  • 1 lb chicken wings, patted dry

  • 1 Tbsp baking powder

Sauce

Garnish

  • 1 Tbsp scallions, sliced on bias (for presentation)

  • ¼ tsp flaky salt

Cook Time: 40 minutes


Preheat your oven to 400F. Pull your chicken wings out of the fridge, do any trimming as needed, and let them come to room temperature on a bed of paper towels. Toss your dried chicken wings with a tablespoon of baking powder; you may hear a faint sizzling sound! 

I like to line my wings on a wire rack atop an aluminum-lined baking sheet. Space them out evenly, and give them one last pat dry with paper towels. Transfer to the oven and roast for 30 minutes at 400F.

In a small saucepan, combine the BBQ sauce, tamari, honey, rice vinegar, sesame oil, garlic, and scallions. Bring the mixture to a boil, stirring often, and then reduce to a simmer. When the sauce has reduced to a syrup-like consistency, remove from the heat.

After 30 minutes, pull out the wings and let them rest at least five minutes before dressing with the sauce. This will allow space for carry over cooking to finish, and to let the skin settle. Transfer the wings to a bowl and toss with the umami BBQ sauce. Garnish with more scallions and flaky salt if desired. Serve warm, and enjoy!
